Η κατανάλωση ξηρών καρπών έχει θετική επίδραση στην μεταγευματική
γλυκόζης του αίματος και στην ινσουλινοαντίσταση [37]. Μελέτες έχουν δείξει ότι οι ξηροί καρποί μπορούν να μειώσουν την αύξηση των επιπέδων της γλυκόζης στο αίμα μετά από ένα γεύμα που περιέχει υδατάνθρακες [38-40]. Η κατανάλωση ξηρών καρπών μπορεί επίσης να βελτιώσει την ινσουλινοαντίσταση [41]. Μια μελέτη με περίπου 84 000 γυναίκες, έδειξε ότι εκείνοι που έτρωγαν 30 γραμμάρια ξηρών καρπών πέντε ή περισσότερες φορές την εβδομάδα, είχαν 27% χαμηλότερο κίνδυνο εκδήλωσης διαβήτη σε σύγκριση με εκείνους που ποτέ ή σπάνια έτρωγαν ξηρούς καρπούς [42].
